Hmm tis a wee bit cold outside, so what better than a pot of chili for dinner.

First, Gather your ingredients (not all are pictured):
I used 2 cans of mild chili beans, 1 small can of jalepenos, 1 lb of gorund beef, 1 lb of hot sausage, 1 small can of tomato paste, 1 small can of tomato sauce, 1 regular sized can of "Rotel", 1 package of hot chili seasoning, 1 heaping tablespoon of garlic, 1 12 oz beer of choice, 2 medium onions, 1 large bell pepper, and one large can of whole, peeled tomatoes.

Next, add your meat to a hot pan, to render and brown.

Moving forward, chop your vegetables.

After I chopped my veggies, I had a catharsis. You guys are special to me :lol: :cry:

Next, pull your meats out of the pan, and place in a crock pot, Add the cans of vegetables (rinse with a bit of the beer), the garlic, some more beer, the chili seasoning, and stir.

In the pan where you cooked the meat, add the fresh vegetables, sweat them off for a few minutes, and add the rest of the beer.

Now, once the beer reduces down to a syrupy consistency, and the veggies are tender, add to the pot, stir, and cover to cook for a few hours.

Hmm my chili is getting zesty but not too hot. I have to consider the well-being of my mom and uncle afterall.


If it were just a pot for me.......hello rolaids! :evil:

We use cerano peppers (or however you spell that ?) ! Nice taste along with the hot.

Depends on who you ask - my wife puts beans in, I don't. I also do rice more than cornbread.

Plus, it's fiber... and the more full of shit you are (moi), the more you need it ! HAR !!!

I think my "3-bean Elk Chili" recipie is over in the old treehouse...

Since it is gettin' colder outside I thought I would share my killer elk meat chili recipie. You say you don't have elk meat? No biggie... it works just as well with venison or plain ol' beef.

Gary’s 3-Bean Elk Chili

2 lbs. Elk meat, cubed
1 lb. Hot/spicy sausage (I use Jimmy Dean)
2 T. Vegetable oil (substitute olive oil, or bacon fat)
2-3 Stalks of celery, chopped diagonally
1 lg. Onion, chopped
1 lg. Red pepper, chopped
Water, enough to just cover veggies
1 Beer (I use a plain ol' can of MGD)
2 Cans chili beans in sauce (do not drain)
2 Cans dark red kidney beans (drained)
2 Cans black beans (drained)
2 Cans Chopped tomatoes
1 Can tomato sauce
1 Can tomato paste
4 T. Chili powder
3 Bay leaves
1 T. Cumin
1 T. Ground mustard
1 T. Seasoning salt
1½ tsp. Black pepper
1 tsp. Oregano
1 tsp. Garlic powder
½ tsp. Crushed red pepper flakes
¼ tsp. Cayenne pepper
2-3 T. Sugar

Brown elk meat and sausage in a large skillet and set aside. Dump the oil into a 12 quart stockpot over medium-high heat, and throw in the celery, onion, and red pepper, and cook until onions are translucent (that’s “clear” to all you rednecks). Now dump enough water over the veggies to cover them and cook another 5-6 minutes (now the celery will be slightly tender). The rest is easy… just dump everything else but the sugar in the pot! Give it a good stir to combine everything, and bring to a boil. Reduce heat to a slow simmer and cook for 1 hour, stirring occasionally. Give it a taste and adjust acidity with 2 or 3 T. of sugar. Then let simmer and additional 2 hours. Remember to give it a sir once in a while

Serve with chopped sweet onions, shredded cheddar cheese, and saltine crackers, and a cold brew. Enjoy!!!

It is supposed to be chilly dogs (COLD) here on Wednesday, so I have gathered all the ingredients for some Chili. I won't use any sausage, as the Haitens won't eat pork and I am planning to make enough to take to work.

Didn't JamesTX have a reciept? I looked in the Old House, but it was not there. I found Garys and here we have Jasons, mine will be a mix of them both!

Brian, if it is going to be cold here, it will be FREEZING where you are.
 
Chili is some good stick to the ribs stuff during cold weather.It's not too bad during hot weather either.

Florida freeze! When I was in Key West in '67 it got down to 65 degrees,once.I looked out the window at all the people running around with jackets and giggled. I went outside and promptly returned for a jacket myself.It seems those 4 or 5 months had got me aclimatized. Would you believe it took me 4 or 5 years before I didn't freeze to death in a northern winter.

On the 12th of Jan 1968 I left Key West ,the temp was 87 degrees.When I landed in Dayton Ohio it was 12 below zero,brrr.

My wife made pinto beans and cornbread last night. I like to mix it all together and put a crapload of black pepper on it.
 
Pinto beans cooked with ham hocks with cornbread and fried potatoes is one of my favorite meals.You gotta watch those pinto's though,they seem to expand once you eat them. That extra half a bowl may give you the belly ache before the relief comes.:lol:
