I'm not going to mess with the corned beef recipe though, it was by far the best corned beef I have ever had. :|:

Looked pretty disgusting before cooking though.

Has anybody tried peach wood for smoking? I saved a couple chunks from a job a month ago. I currently don't have a smoker though, the old one is a pile of rust dust now.

It was a Nutball smoker for sure. Held steady temp though, I could run it anywhere from 110 to 400F

any fruit wood is good

removed all health benefits with bacon..........apple smoked
