    Al, at one restaurant I worked at they would occasionally add a type of smoked fish as a special. We had a good sized wok station.     I used to really enjoy orange wood as well. Had a never ending supply of that when I was just out of high school and renting a guest house at my Grandma's Orange orchard :) Sure made for a good steak. Has to be really really dry though.

    LMAO We been getting 225 for oak split and del. 150 for pine cedar I can get 175-200 on occasion. I run a pretty heavy cord also. about 10 percent over.
